Flying EgyptAir from Lisbon to Amman gave me some time at Cairo International as well. Terminal 3 is now the very modern terminal for all Egyptair (and Star Alliance partners). It is U-shaped with about 20 gates with airbridges. The only views are from the restaurant area between the two ´fingers´, but not that good. You can see the planes at the inner gates (8 gates) and you can see one runway and a little bit of the taxiway to the remote stands. Unfortunately there are no views of the other terminals (1 and 2), military ramps, cargo ramps and dumped airlines. Egyptair planes also mostly use the runway in front of this terminal (the southern runway), which does not give you much extra while taxiing.
If you are flying into Cairo with EgyptAir, try getting a window seat on the left. If you have a western approach you will have a nice view of the Pyramids at Gizeh and you will be able to see the military base of Cairo East (Almaza).

Leaving from Cairo on a morning flight at least gave us a little better views (in day light) and the gates and ramps were full. Having our plane at the last remote stand also helped of course!
On take off I could see 12 Egypt AF C-130s on the military ramp....
